They are not for spanking the spread.

These are butter paddles. Wille included them in the book, so I made some out of fresh birch. A very satisfying little project, and they turn out to be really useful. In a why-have-I-never-seen-one-of-these-before sort of way. Seriously, you will not use a table knife for butter again unless forced to. One caution: you *may* start putting more butter on your bread.

I wish I had some fresh birch to play with. Or so fresh ash. That would be awesome. I may have to try this with the maple that I have.

I think the maple is the better choice. If you soak it, it carves nicely.

So far, the paddle in the bottom of the picture is our favorite. The smoother curve at the bottom of the blade stays out of the way.
